Grilled Carrots with Lemon and Mint

  1. Preheat grill to medium-high.
  2. In a small bowl, stir together lemon zest, lemon juice, honey, salt and pepper until blended; set aside.
  3. Coat carrots with cooking spray. Grill until lightly charred and almost tender, turning occasionally, about 10 minutes.
  4. Brush carrots with some lemon mixture; continue cooking, brushing once or twice more with lemon mixture, until carrots are tender, about 5 minutes.
  5. Remove carrots to a serving platter and drizzle with remaining lemon mixture (or just a little if too lemony for your taste); sprinkle with mint.

Notes

Yields 1 carrot per serving.

We used three different colored carrots in this recipe for a pretty presentation. Check a farmer's market for purple and yellow varieties. Give this recipe a Moroccan twist by adding a little ground cumin and a pinch of cinnamon to the lemon mixture.
